Mustard Seeds are the small round seeds derived from the mustard plant. The seeds are obtained from fruit pods of the mustard plant in the Brassica family. The Major producers of Mustard are Pakistan, India, Canada, Nepal, Myanmar, Russia, USA, and Ukraine.

Mustard Seeds are important spice used as a main Ingredient in several cuisines worldwide. The Mustard seed is the small round seed and usually about 1-2 mm in diameter. They are yellowish white to black in color. There are around forty varieties of mustard cultivated worldwide but the three main varieties are Black mustard, Brown Indian Mustard, and White Mustard.
Varieties:
There are three main varieties of mustard are mentioned below:
- White Mustard ( Yellow Mustard): – The seeds are light straw yellow colored and slightly larger than the other varieties. They have a mild in taste.
- Black Mustard: – The seeds commonly grow in South Asia. They are sharp and more pungent in taste.
- Brown Mustard: – They are native to sub –Himalaya region of Northern India. They are dark yellow in color and have a pungent acrid taste.
Storage:
Mustard seed can be stored in an airtight container away from moisture, heat, and sunlight. Then, they will remain their flavor for an indefinite time.
Uses:
The Mustard Seed is used as a flavoring agent and culinary preservative worldwide. The Ground and whole mustard seed adds flavor to sauces, dressing, and mayonnaise as well as grilled and roasted meat, cabbage, strong cheeses, chicken, curries, lentils, fish, and seafood, cold meats, rabbit, sausages and barbeque rubs.
