Black cardamom is also known as Nepal cardamom comes from species Amomum Subulatum in the family Zingiberaceae. It is native to the eastern Himalayas. The largest producer of the black cardamom is Nepal, India, China, Vietnam, and Bhutan.
Description:
Black cardamoms are very popular spice in India and other Asian Cuisine. It is derived from the seed pods of the perennial flowering plant. They are 4 to 6 times bigger in size of the common small green cardamom. It also has different taste and flavor of the green cardamom. It has a distinctly more astringent aroma, though not bitter, with coolness similar to mint. It gives a smoky flavor to several dishes.
Storage:
Store it in an airtight jar in a cool and dry place, in order to retain the aroma. It will remain useful for a year in dry conditions
Uses:
Black cardamoms are used as a spice in Indian & Gulf region. It is consumed as whole pod or seeds in raw or fried. Black Cardamom is used as the main constituent of garam masala. It is used for preparing dal, soups, hearty meats, chowders, casseroles, tandoors, and vegetable dishes. It is also found in beverages, sweets like rice pudding, tea, and even coffee.
